Day 02

Start the day with a guided tour to discover the wonders of this unique city. As you approach, you will be struck by the impressive walls, which stretch for over three kilometers around the city's perimeter. The Basilica of Saint-Nazaire the "Jewel of the City" (11th-14th centuries), is an example of the harmonious coexistence between the Romanesque and Gothic, and whose stained glass windows are the most beautiful in the Midi region. The Chateau Comtal (Count's Castle) is the most significant monument in Carcassonne's fortified cité. Then take a stroll along the ramparts for breathtaking views of the city and the surrounding countryside. After lunch continue to the Bastide Saint Louis, built during his reign. Enjoy some free time at the end of the day to walk through the charming streets of the citadel. Dinner at the hotel.

An oenology experience at Chateau Caux et Sauzens, a rich and varied vineyard spread over more than 70 hectares with a cultivation respecting the natural environment. Enjoy a tasting of their wines alongside the Midi Canal. After lunch we head to Châteaux de Lastours, a vast archaeological complex with its four castles, Cabaret Tour Regine, Surdespine and Quertineux, built on top of a rocky base and its medieval village, the Castrum de Cabaret, deeply embedded in the valley. The afternoon continues at Villeneuve-Minervois, capital of the Cathare Country Truffle. A gormet moment at the Truffle Museum to taste the mythical 'Black Diamond'. Dinner at the hotel.

Castelnaudary is the capital city of the famous cassoulet. Begin the day with a visit to Seuil de Naurouze, an iconic site on the Canal du Midi, where all the waters of the Montagne Noire come toghether and give birth to the canal. For lunch, enjoy an authentic 3 coursee cassoulet meal. Legend has it that cassoulet, so dear to Occitan cuisine, was invented in the middle of a 100-year war, during the siege of Castelnaudary by the English. After lunch we take a 2 hour cruise to enjoy the Canal du Midi, a UNESCO World Heritage site. Dinner at the hotel.
